中西方厨具异同

西式厨刀有很多种:主厨刀,小切刀,花刀,去骨刀等等。几乎每一类食材都有一种专属于它们的烹饪刀具。这样可以保留食材的最佳味道和口感。而中式厨刀种类虽不比西式厨刀少,但最常见的还是方片菜刀。中国厨师更看重的是刀功,因而中国菜肴味道相比于西方国家更丰富。

There are many kinds of Western-style kitchen knives: chef's knife, small cutter, flower knife, boning knife and so on. Almost every kind of food has a kind of cooking knife. This reserve the best taste and  of the ingredients.However   the types of Chinese kitchen knives are not less than those of Western kitchen knives,but the most popular ones are square kitchen knives. Chinese cooks pay more attention to knife skills, so the taste of Chinese dishes is richer than that of Western countries.


中国菜更加偏爱蒸煮的烹饪方式。圆底锅能够充分利用明火的温度,使烹饪速度更快。而西方国家更喜爱使用平底锅。圆底锅的深度更深一些,这是由于中国菜主要是做给很多人共同享用,而且在翻炒是不必担心食物撒出来。

Chinese food prefers the steaming style of cooking. Round-bottomed pans can take full advantage of the temperature of the open fire to make cooking faster. Western countries like to use flat -bottom pans. The depth of the round bottom pot is deeper, because Chinese food is mainly cooked for many people to enjoy together, and there is no need to worry about food spilling when stir-frying.
